There are two types of people in this world: breakfast people and dinner people (I’ve literally never met anyone who would consider themselves a lunch person). I fall into the first camp. I could honestly eat breakfast for every meal and I don’t think I’d ever get sick of it. When I’m feeling stressed, frazzled, or sad, breakfast food is the perfect easy pick-me-up. Most of my breakfast recipes are quick and simple, making them a great way to end a busy day at work when I’m too drained to spend more than a few minutes cooking.
I pretty much love all breakfast foods, but I’m more of a French toast/pancakes/waffles gal than an omelette gal. Give me a plate of fluffy French toast and home fries and I’m set! I developed my cinnamon French toast recipe over the course of several months and it’s my favorite easy way to elevate a weekend breakfast. I top mine with chocolate chips and strawberries, but it’s just as delicious with a coating of powdered sugar and splash of syrup. Give it a try and let me know what you think!
Cinnamon French Toast

4-6 slices brioche bread
2 large eggs
1/2 cup milk
2 TBSP sugar
1/2 tsp vanilla extract
1/2 tsp cinnamon
2 TBSP butter
Directions
- In a large flat-bottomed bowl or glass pan, whisk together eggs, milk, sugar, vanilla, and cinnamon.
- Melt butter in a medium skillet over medium-high heat.
- One piece at a time, add bread to egg mixture, coating both sides. Lift out of mixture with a fork and hold for a few seconds to ensure the excess mixture drips off.
- Add bread to skillet and cook for 1-2 minutes on each side until golden brown
- Top with powdered sugar, chocolate chips, or fruit and enjoy!
