INSTANT POT MASHED POTATOES RECIPE

My dad got me an Instant Pot for Christmas last year, and let me just say it is LIFE. CHANGING. We have a tiny kitchen, which means not much room for appliances – and that makes it even more critical that the appliances we do have can perform multiple functions. This is one of many reasons that I love the Instant Pot! It can saute, pressure cook, slow cook, and more. And at under $100, it’s well worth the expense. Although the Instant Pot isn’t quite as fast as I thought it would be (it takes about 5-10 minutes to heat up, then typically needs to slow release for 10ish minutes, so I typically add 15-20 minutes to the cook time in any recipe), I love that it’s so low maintenance – I can just toss the ingredients in and forget about them while the Instant Pot does its thing. So easy!

I love mashed potatoes almost as much as I love my Instant Pot. So when I found out that I could make mashed potatoes in the Instant Pot, I had to try it out immediately. I’ve made this recipe several times and I think I’ve finally tweaked it enough to make the perfect creamy, slightly garlicky mashed potatoes. Try it out and let me know what you think!

Ingredients

  • 1 1/2 lb small potatoes, such as yukon gold, quartered

  • 3/4 cup milk

  • 1/4 tsp garlic powder

  • 2 TBSP butter

  • Salt and pepper to taste

Directions

  • Wash the potatoes and place them in your Instant Pot.
  • Add enough water to the Instant Pot to cover the potatoes (about 3 to 4 cups).
  • Close the lid and set the vent to sealing.
  • Set the Instant Pot to high pressure for 8 minutes. (Note: it will take 5 to 10 minutes for the Instant Pot to heat up).
  • Let the Instant Pot release pressure naturally for 10 minutes, then use quick release to release the remaining pressure.
  • Drain the potatoes, then return them to the Instant Pot
  • Mash the potatoes using a potato masher (TIP: if you don’t have a potato masher, a large fork or slotted spoon works well for this).
  • Once the potatoes are adequately mashed, add the milk 1/4 cup at a time, stirring it to incorporate after each addition.
  • Add the garlic powder, butter, and salt and pepper to taste. Give it a good stir until the butter is fully melted and serve alongside your favorite meal. Enjoy!
