In our household, we eat a LOT of salmon. It’s my go-to meal when I want something that’s healthy but high in protein. We typically have salmon for dinner at least once a week, so I’ve tried countless salmon recipes and truthfully, I have yet to try one I didn’t like. As long as you know how to cook it properly, it’s hard to go wrong with salmon. It’s such a versatile food because it’s great with just olive oil and some salt and pepper, but just as delicious with a beurre blanc sauce or even coated in barbecue sauce. Because I cook salmon so often, it’s become one of my favorite foods to experiment with when I’m creating new recipes.
I first made this salmon recipe last month, and it took a couple of tries to get right. Darian and I both love green peppers, but we’re not really fans of plain red peppers. Roast them, though, and it’s a different story! In an effort to incorporate some new vegetables into our meals, I decided to try out a simple roasted red pepper sauce to pair with salmon and I’m thrilled with how it turned out. This recipe pairs fresh, flaky salmon with a zesty roasted red pepper sauce for a meal that’s hearty but refreshing. I love to serve this with a side of roasted zucchini and potatoes, but it would be great paired with any number of veggies. Try it out and let me know what you think!
Salmon with Roasted Red Pepper Sauce

- For the Salmon:
4 salmon filets
Olive oil
Salt and pepper
- For the Roasted Red Pepper Sauce:
1 red pepper, sliced
2 TBSP olive oil
2 cloves garlic, minced
2 tsp honey
Juice of half a lemon
1/8 tsp red pepper flakes
Salt and pepper to taste
Directions
- Preheat the oven to 400 degrees.
- Heat 1 TBSP olive oil in a pan over medium heat. Add red peppers and sauté, stirring occasionally, until soft and beginning to get brown on the edges, around 10-15 minutes.
- While the peppers are cooking, prepare your salmon. Drizzle each salmon filet with a bit of olive oil, then sprinkle with salt and pepper. Bake at 400 degrees until done (about 10 to 12 minutes, depending on how thick your filets are).
- When the peppers are done cooking, add peppers, garlic, honey, lemon juice, red pepper flakes, and 1 TBSP olive oil to a magic bullet or blender. Blend until smooth. Taste and season with salt and pepper as needed.
- Once the salmon is done cooking, transfer to plates and drizzle each piece of salmon with roasted red pepper sauce. Serve with vegetables of your choice and enjoy!
