VEGGIE BURGER BOWLS WITH SPECIAL BURGER SAUCE RECIPE

Growing up, I was never really a big fan of burgers. My parents didn't let us eat fast food often, so they weren't something I thought about that much. Strangely enough, I didn't really develop a love of burgers until I stopped eating meat. As much as I wasn't a fan of regular burgers, I love a good veggie burger. We're lucky to have three phenomenal burger places in Frederick, and each of them boasts a DELICIOUS veggie burger - so since moving here, my love of veggie burgers has grown exponentially. I think what I've realized is that it's...

BUCATINI WITH FRESH SUMMER VEGGIES RECIPE

Today I'm sharing the recipe that reignited my love of pasta. In this recipe, fresh zucchini and basil, juicy cherry tomatoes, and crunchy corn come together in a zesty lemon sauce for a pasta that's simple but flavorful. I prefer it with bucatini (my favorite), but it would be great with any type of pasta! Everything comes together in 30 minutes flat and it's the perfect meal for a summer night on the patio. Try it out and let me know what you think!

VEGETARIAN TACO SALAD WITH CHIPOTLE RANCH DRESSING RECIPE

On a beautiful summer day, there's nothing I crave more than a fresh salad with a yummy dressing. Not all salads are created equal though, and sometimes I need something a little heartier than my typical salad. On those days, I turn to my trusty vegetarian taco salad recipe. Crunchy butter lettuce is topped with juicy tomatoes, fresh corn, and creamy avocado, and the addition of flavorful meatless crumbles seasoned with taco seasoning makes it heartier than your average salad. A zesty chipotle ranch dressing comes together in minutes and pulls it all together!

QUICK PANTRY PICKLES RECIPE

The thought of making my own pickles never really dawned on me until a couple of years ago, but once I started, I couldn’t stop. I’m of the opinion that every vegetable tastes better pickled. I came up with this recipe over a year ago and it’s been a staple in our house ever since. The beauty of this recipe is its simplicity - you should already have all these ingredients in your pantry. Try it out and let me know what you think!

CINNAMON FRENCH TOAST RECIPE

There are two types of people in this world: breakfast people and dinner people (I've literally never met anyone who would consider themselves a lunch person). I fall into the first camp. I could honestly eat breakfast for every meal and I don't think I'd ever get sick of it. When I'm feeling stressed, frazzled, or sad, breakfast food is the perfect easy pick-me-up. Most of my breakfast recipes are quick and simple, making them a great way to end a busy day at work when I'm too drained to spend more than a few minutes cooking.

VEGETARIAN ENCHILADAS WITH PEPPERS AND ONIONS RECIPE

Everyone has their own version of comfort food, and for me, it comes in the form of warm, gooey, cheesy Mexican food. I love a good taco, but my real weakness is enchiladas. My favorite local Tex-Mex place has the BEST cheese enchiladas and I pretty much crave them 24/7. However, since I don't really have the budget to eat out every single time I'm craving enchiladas, I set out to find a good recipe for them a few weeks ago. I was shocked at how difficult it was to find a good recipe for cheese enchiladas, so I decided...

VEGGIE TACOS WITH AVOCADO CREMA RECIPE

Cooking has been one of my favorite hobbies for years now, but with everything that's been happening in the world lately, it's been a great stress reliever too. Since I know a lot more people will be cooking at home rather than going out to eat over the next few weeks, I'm going to do my best to share some new recipes with you all! This recipe for Veggie Tacos with Avocado Crema is a great place to start. I adapted it from a recipe I originally found on one of my favorite vegetarian cooking blogs, Cookie and Kate. If...

INSTANT POT MASHED POTATOES RECIPE

My dad got me an Instant Pot for Christmas last year, and let me just say it is LIFE. CHANGING. We have a tiny kitchen, which means not much room for appliances - and that makes it even more critical that the appliances we do have can perform multiple functions. This is one of many reasons that I love the Instant Pot! It can saute, pressure cook, slow cook, and more. And at under $100, it's well worth the expense. Although the Instant Pot isn't quite as fast as I thought it would be (it takes about 5-10 minutes to...
