Growing up, I was never really a big fan of burgers. My parents didn't let us eat fast food often, so they weren't something I thought about that much. Strangely enough, I didn't really develop a love of burgers until I stopped eating meat. As much as I wasn't a fan of regular burgers, I love a good veggie burger. We're lucky to have three phenomenal burger places in Frederick, and each of them boasts a DELICIOUS veggie burger - so since moving here, my love of veggie burgers has grown exponentially. BUCATINI WITH FRESH SUMMER VEGGIES RECIPE
Today I'm sharing the recipe that reignited my love of pasta. In this recipe, fresh zucchini and basil, juicy cherry tomatoes, and crunchy corn come together in a zesty lemon sauce for a pasta that's simple but flavorful. I prefer it with bucatini (my favorite), but it would be great with any type of pasta! Everything comes together in 30 minutes flat and it's the perfect meal for a summer night on the patio. Try it out and let me know what you think!
VEGETARIAN TACO SALAD WITH CHIPOTLE RANCH DRESSING RECIPE
On a beautiful summer day, there's nothing I crave more than a fresh salad with a yummy dressing. Not all salads are created equal though, and sometimes I need something a little heartier than my typical salad. On those days, I turn to my trusty vegetarian taco salad recipe. Crunchy butter lettuce is topped with juicy tomatoes, fresh corn, and creamy avocado, and the addition of flavorful meatless crumbles seasoned with taco seasoning makes it heartier than your average salad. A zesty chipotle ranch dressing comes together in minutes and pulls it all together!
UPGRADED VEGETARIAN RAMEN RECIPE
If you follow me on Instagram, you know I LOVE a good bowl of ramen. There's just something so comforting and delicious about it. Last year I decided I wanted to try my hand at making some upgraded homemade ramen. I found a great recipe on Pinterest that I loved, but it required a homemade mushroom broth that was a bit labor intensive for me. After making it a few times, I realized I could recreate the flavor profile of the recipe in a much simpler way. I usually make homemade ramen at least twice a month, so I've workshopped...
BBQ CAULIFLOWER WINGS WITH BLUE CHEESE DIP RECIPE
It's been over 10 years since I last ate meat, so I'm finally at the point where there aren't many meat dishes that I crave. There are a few exceptions to this, though, and perhaps the biggest one is wings. I was never all that into wings when I still ate meat because I hated spicy things, but I've grown to like a little bit of spice and after marrying someone who LOVES wings I've found myself craving them anytime I smell the delicious sauce.
